Gorillaz Birthday Cake

This cake is inspired by our beloved Gorillaz dessert, a roasted banana with chocolate ganache, walnut crumble and brown butter.

Ingredients:

475 gAll-purpose flour
1 teaspoonBaking powder
½ teaspoonBaking soda
½ teaspoonSalt
½ CupUnsalted butter, at room temperature
1 CupGranulated sugar
2Large eggs
3Ripe bananas, mashed
1/3 CupPlain yogurt or buttermilk
1 teaspoonVanilla extract
1 cupChocolate chunks or chocolate chips
Vanilla ice cream (the natural vainilla super creamy delicious kind)

Procedure:

1. Preheat and prepare:

  • Preheat your oven to 350°F (180°C).
  • Grease and flour a 9-inch square baking pan or line it with parchment paper.

2. Combine dry ingredients:

  • In a large bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.

3. Cream butter and sugar:

  • In another large bowl, cream together the butter and sugar until light and fluffy.

4. Add wet ingredients:

  • Beat in the eggs one at a time until well combined.
  • Mix in the mashed bananas, yogurt (or buttermilk), and vanilla extract until smooth.

5. Mix Dry and wet ingredients:

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chocolate chunks or chocolate chips gently until evenly distributed.

6. Bake:

  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center of the cake comes out clean or with moist crumbs (not raw batter).
  • Once done, remove from the oven and let cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.

Serve:

Dust with powdered sugar on top of the cooled cake. Transfer to a lovely plate that allows cutting on top. Serve with vanilla ice cream
