This cake is inspired by our beloved Gorillaz dessert, a roasted banana with chocolate ganache, walnut crumble and brown butter.

Ingredients:
475 g | All-purpose flour |
1 teaspoon | Baking powder |
½ teaspoon | Baking soda |
½ teaspoon | Salt |
½ Cup | Unsalted butter, at room temperature |
1 Cup | Granulated sugar |
2 | Large eggs |
3 | Ripe bananas, mashed |
1/3 Cup | Plain yogurt or buttermilk |
1 teaspoon | Vanilla extract |
1 cup | Chocolate chunks or chocolate chips |
Vanilla ice cream (the natural vainilla super creamy delicious kind) |
Procedure:
1. Preheat and prepare:
- Preheat your oven to 350°F (180°C).
- Grease and flour a 9-inch square baking pan or line it with parchment paper.
2. Combine dry ingredients:
- In a large bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
3. Cream butter and sugar:
- In another large bowl, cream together the butter and sugar until light and fluffy.
4. Add wet ingredients:
- Beat in the eggs one at a time until well combined.
- Mix in the mashed bananas, yogurt (or buttermilk), and vanilla extract until smooth.
5. Mix Dry and wet ingredients:
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chunks or chocolate chips gently until evenly distributed.
6. Bake:
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center of the cake comes out clean or with moist crumbs (not raw batter).
- Once done, remove from the oven and let cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
Serve:
Dust with powdered sugar on top of the cooled cake. Transfer to a lovely plate that allows cutting on top. Serve with vanilla ice cream
