Plantain Fufu

4 portions

Ingredients:

1 kgRipe plantains (almost completely black skin)
150 gWhite onion, diced
30 g Minced garlic
50 gChopped parsley
100 gPork lard
2 gGround cumin
5 gCilantro
2 gTurmeric

Procedure:

  1. Bake the plantains at 200°C (392°F) until the skin bursts. Remove the peel, mash the flesh in a bowl, and set aside.
  2. In a saucepan over medium heat, melt the pork lard. Add the garlic and onion, cooking until translucent. Mix in the mashed plantains and cook for 2 minutes.
  3. Remove from heat and stir in the cumin, turmeric, parsley, and cilantro. Mix thoroughly and serve.
  4. For a special touch, add cubes of melting cheese and bake until melted for an enhanced experience.
