Food is a language, a code that tells tales about a place, the content of its nature and surroundings. Culture springs around the ingredients available, lifestyle is defined by the ways the community relates to them. Local ingredients are one of the purest (and most delicious) ways to understanding any location and its people.
In this section of Food and drinks of Kitchenette, you will find out about our amazing indigenous or local ingredients, at Kitchen Table, they are our inspiration. To show our respectful approach to the flow of nature, we use only fresh, seasonal ingredients. We enjoy the renewal and challenge that the different seasons bring to us as a team. So, in every changing of the season, we will present here the stars of the coming menus.
We believe that following the life cycle of the endemic products allows us to work with them and offer them at their peak, when they are at their best. When studying the elements around us, we investigate their seasonality and usage, the history of all its preparations, its storage and trade, their nutritional value and chemical composition, the status or comfort that their consumption gives to the people in the area. We get infinitely curious about the ways we can approach and work with them, we obsess with finding the preparation that will let the ingredients provide their best version.
We search for quality and research for technique for every item we present at our places, whether is a Small or Big bite, a signature cocktail or a house made soda. We are sincerely committed to the high-quality experience we deliver; we really care. We test plenty creative, innovative ideas and go down fun rabbit holes to keep everything simple, yet amazing. Our principle, in the kitchen and in life, is that less makes way for more.
Our current locations, which for now comprise Tulum, located in the always enticing Yucatan Peninsula and San Jose del Cabo, culinary destination in the exciting Baja, provide us with contrasting Mexican flavors and produce. One is a dense jungle, luscious and tropical, the other an agave filled dessert washed by a species rich ocean. We are already salivating over all the diversity we can have fun with at every season to come at each region.
We are passionate nerds and are happy to share with you what we learn in the awesome journey of cooking and shaking that we enjoy so much.
